High-hydration sourdough boule (78%)

An open-crumb sourdough boule at 78% hydration with a crackling crust. A dependable recipe for artisan sourdough bread at home. Keywords: sourdough bread, high hydration, open crumb, artisan boule.

Ingredients

  • 450 g bread flour
  • 50 g whole wheat flour
  • 390 g water (78% hydration)
  • 100 g active sourdough starter
  • 10 g salt

Instructions

  1. Mix flours and water, rest 45 minutes (autolyse).
  2. Add starter and salt, then strengthen with stretch-and-folds.
  3. Do 4 sets of stretch-and-folds over 2 hours, 30 minutes apart.
  4. Bulk ferment until ~50% risen and airy, about 4–6 hours at 22 °C.
  5. Shape into a tight boule and proof in a banneton.
  6. Cold-proof in the fridge overnight for flavour and easier scoring.
  7. Bake in a preheated Dutch oven at 250 °C, 20 min lid on, 20–25 min lid off.
